    Prepare the Pork Shank

    Season the pork shanks generously with salt and black pepper. In a large pot, heat the olive oil over medium heat. Sear the pork shanks on all sides until golden brown, about 8-10 minutes. Remove the shanks and set aside.

    Add Aromatics

    In the same pot, add garlic cloves, thyme, and bay leaves. Cook for 2-3 minutes until fragrant.

    Confit the Pork

    Return the seared pork shanks to the pot. Cover the shanks with olive oil. Bring to a gentle simmer, then cover and cook on low heat for about 4 hours, or until the meat is tender and falling off the bone.

    Prepare the Mashed Potatoes

    While the pork is cooking, prepare Robuchon-style mashed potatoes. Boil 2 pounds of peeled potatoes until soft. Drain and pass through a ricer. Mix in unsalted butter, warm cream, and season with salt to taste.

    Serve the Dish

    Once the pork is cooked, remove from oil and let it rest for a few minutes. Serve the pork shank on a plate with a generous spoonful of mashed potatoes, a dollop of mustard, and drizzle with truffle oil.
