In a skillet, melt 3 tablespoons of sugar over medium heat until it turns golden. Add sliced almonds and stir until coated. Spread onto a parchment-lined baking sheet and let cool before breaking into pieces.

Melt the Chocolate
In a double boiler or microwave, melt the chopped dark chocolate and unsalted butter together until smooth. Stir occasionally to prevent burning. Remove from heat and let cool slightly.

Whip the Eggs
In a large bowl, whisk together the eggs and powdered sugar until thick and pale, about 3-5 minutes. Stir in the vanilla extract.

Combine Mixtures
Slowly fold the melted chocolate mixture into the egg mixture until fully combined. Be gentle to maintain the airiness.

In a separate bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture gently, followed by the cocoa powder and a pinch of salt.
