    Prepare the crust

    Preheat your oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs and melted butter. Mix well and press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from oven to cool.

    Make the filling

    In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add sour cream and vanilla extract, mixing until well combined. Add eggs one at a time, mixing just until incorporated after each addition.

    Add raspberries

    Gently fold in the fresh raspberries to the cream cheese mixture.

    Bake the cheesecake

    Pour the filling over the cooled crust. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.

    Cool and chill

    Turn off the oven and leave the cheesecake inside for 1 hour. Then, remove and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight.

    Once chilled, slice the cheesecake and serve with additional raspberries on top, if desired.
