    Prepare the Marinade

    In a bowl, combine olive oil, minced garlic, Banyuls vinegar, salt, and black pepper. Whisk until well blended.

    Marinate the Chicken

    Place chicken breasts in a resealable bag or dish. Pour the marinade over the chicken, ensuring it's well coated. Seal or cover and refrigerate for at least 30 minutes.

    Prepare the Grill

    Preheat your grill to medium-high heat. If using a brick, place it on the grill to heat up.

    Grill the Chicken

    Remove the chicken from the marinade and place it on the grill. Use a brick or heavy pan to press down on the chicken for even cooking. Grill for about 6-7 minutes on each side or until cooked through.

    Grill the Vegetables

    While the chicken is grilling, cut the gem lettuce in half and clean the trumpet mushrooms. Brush them lightly with olive oil and season with salt and pepper. Place them on the grill cut side down for about 3-4 minutes until they are tender and have grill marks.

    Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Serve the grilled chicken alongside the grilled gem lettuce and trumpet mushrooms, drizzled with any remaining marinade if desired.
