Prepare the Filling
In a large skillet over medium heat, melt the butter and sauté the chopped onion and minced garlic until translucent. Add the ground pork, beef, and veal, cooking until browned. Stir in the grated potato, poultry seasoning, salt, black pepper, cinnamon, and nutmeg. Add the chicken broth, reduce heat, and simmer for about 15 minutes, until the mixture thickens. Allow to cool slightly.

Assemble the Pie
Preheat the oven to 375°F (190°C). Roll out half of the pie crust and fit it into a 9-inch pie plate. Pour the cooled meat filling into the crust. Roll out the second half of the crust, place it over the filling, and seal the edges. Cut slits in the top crust to allow steam to escape.

Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown. Let it cool for about 15 minutes before slicing.
