Pour the collected maple sap into a large, open pan. Boil the sap over a heat source, preferably outdoors, to avoid excess moisture in your kitchen. Maintain a steady boil.

Reducing the Sap
Continue boiling the sap until it reduces in volume and thickens. This process can take several hours. The sap will change color from clear to a golden amber.

Finishing the Syrup
Once the syrup reaches a temperature of 7°F above the boiling point of water, it is ready. Use a candy thermometer to ensure accuracy. Filter the syrup to remove impurities.
