    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook for about 5 minutes, stirring occasionally, until they begin to soften.

    Add the chopped onion and bell pepper to the skillet. Cook for an additional 5 minutes until the vegetables are tender.

    Incorporate Corned Beef

    Stir in the corned beef and cook until heated through, about 3-4 minutes. Season with salt and black pepper.

    Prepare the Eggs

    In a separate bowl, whisk together the eggs and add a pinch of salt. Pour the beaten eggs over the hash mixture in the skillet.
