Prepare the Potatoes
Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick.

Soak in Water
Place the potato strips in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Dry the Potatoes
Drain the potatoes and pat them dry with a clean kitchen towel to remove excess moisture.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add a batch of potato strips to the hot oil and fry until golden brown, about 5-7 minutes.

Drain and Season
Remove the fries from the oil and drain on paper towels. Immediately season with salt and ground black pepper to taste.

Serve the French fries hot, either plain or with your favorite dipping sauces.
