Crepes and Fillings

Method

Preparation

  1. 1

    Make the Crepe Batter

In a large mixing bowl, whisk together the flour, milk, eggs, melted butter, and maple syrup until smooth. Let the batter rest for at least 30 minutes.

  2. 2

    Cook the Crepes

Heat a non-stick skillet over medium heat and lightly grease with butter. Pour about 1/4 cup of batter into the skillet, swirling to evenly coat the bottom. Cook for 1-2 minutes or until the edges begin to lift, then flip and cook for an additional 1-2 minutes. Repeat with remaining batter.

  3. 3

    Prepare the Filling

In a small bowl, mix together the powdered sugar and cinnamon. Optionally, prepare the honey drizzle by combining honey with a small amount of warm water until smooth.

  4. 4

    Assemble the Crepes

Fill each crepe with a spoonful of maple cream filling (or just leave them plain if you prefer). Dust with powdered sugar or cinnamon sugar and drizzle with brown butter or honey if desired.

  5. 5

    Serve

Fold or roll the crepes and serve warm. Enjoy!
