    Prepare the Homefries

    Dice the potatoes and boil them in salted water until tender, about 10 minutes. Drain and pan-fry in a skillet with 1 tablespoon of butter until golden and crispy, about 10-15 minutes. Season with salt and pepper.

    Cook the Bacon

    In a separate skillet, cook the bacon over medium heat until crispy. Remove from skillet and place on paper towels to drain excess fat. Chop into bite-sized pieces.

    Sauté Vegetables

    In the same skillet used for bacon, add the diced onion and bell pepper. Sauté until softened, about 5-7 minutes.

    Scramble the Eggs

    In a bowl, whisk the eggs with a pinch of salt and pepper. Pour into the skillet with the sautéed vegetables and cook, stirring gently, until the eggs are just set. Add the cooked bacon and cheddar cheese, stirring until the cheese is melted.

    Make the Toast

    In another skillet, melt 1 tablespoon of butter and toast the slices of bread until golden brown on both sides.

    On a plate, serve a generous portion of homefries topped with the scrambled egg mixture. Serve with the homemade toast on the side.
