Cottage Cheese Preparation

    Heat the Milk

    In a large pot, heat the whole milk over medium heat until it reaches 190°F (88°C), stirring occasionally to prevent scorching.

    Add Vinegar

    Remove the pot from heat and stir in the white vinegar. Allow the mixture to sit for about 5-10 minutes until curds and whey separate.

    Strain the Curds

    Line a colander with cheesecloth and pour the curds and whey into it. Let it drain for about 10 minutes.

    Rinse the Curds

    Rinse the curds under cold running water to remove the vinegar taste. Gather the cheesecloth and gently squeeze out excess water.

    Season the Cottage Cheese

    Transfer the curds to a bowl, add salt, and mix. If you'd like creamier cottage cheese, stir in heavy cream to taste.

    Chill and Serve

    Cover and refrigerate the cottage cheese for at least 1 hour before serving. Enjoy it plain, or with fruits or vegetables.
