Cooking the Potatoes
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden brown and fork-tender, about 10-15 minutes. Stir occasionally.

Cooking the Eggs
In a separate small pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and cook according to your preference (sunny-side up, over easy, etc.).

Serve the corned beef hash topped with the cooked eggs. Pair with homemade toast on the side.
