Cooking Instructions

  1. 1

    Preparing the Ingredients

Begin by dicing the corned beef, potatoes, onion, and bell pepper. Mince the garlic.

  2. 2

    Cooking the Potatoes

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden brown and fork-tender, about 10-15 minutes. Stir occasionally.

  3. 3

    Adding Vegetables and Corned Beef

Add the onion, bell pepper, and garlic to the skillet with the potatoes. Cook for an additional 5 minutes until the vegetables are softened. Then, stir in the diced corned beef and cook for another 5-7 minutes until heated through and slightly crispy.

  4. 4

    Cooking the Eggs

In a separate small pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and cook according to your preference (sunny-side up, over easy, etc.).

  5. 5

    Serving

Serve the corned beef hash topped with the cooked eggs. Pair with homemade toast on the side.
