Omelet and Hollandaise Sauce

    Prepare the Hollandaise Sauce

    In a double boiler, whisk together egg yolks, lemon juice, and a pinch of salt until thickened. Slowly drizzle in melted butter while whisking continuously until the sauce is smooth and creamy. Add hot sauce to taste and set aside.

    Cook the Broccoli

    Blanch the broccoli florets in boiling water for 2-3 minutes until bright green. Drain and set aside.

    Prepare the Omelet

    In a bowl, whisk together eggs, milk, salt, and pepper. Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter. Pour in the egg mixture and cook until the edges start to set.

    Add Fillings

    Layer the Canadian bacon, cooked broccoli, and cheddar cheese on one half of the omelet. Gently fold the other half over the fillings and cook for another 2-3 minutes until the cheese melts.

    Serve

    Slide the omelet onto a plate and drizzle with hollandaise sauce. Serve immediately.
