Make the Biscuits
Preheat your oven to 450°F (230°C). In a large mixing bowl, combine flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in milk until just combined. Do not overmix.

Shape and Bake Biscuits
Turn dough onto a floured surface and knead gently 5-6 times. Pat to about 1-inch thickness and cut with a biscuit cutter. Place on a baking sheet and bake for 12-15 minutes until golden brown.

Prepare the Sausage Gravy
In a large skillet, cook the sausage over medium heat until browned. Remove sausage and drain excess fat, leaving about a tablespoon in the skillet. Sprinkle in flour and cook for about 1 minute, stirring constantly.

Make the Gravy
Gradually whisk in 2 cups of milk and bring to a simmer. Stir in black pepper and cooked sausage. Cook until thickened, about 5-7 minutes.

Serve
Serve warm biscuits topped with sausage gravy alongside cooked eggs and a breakfast side of your choice.
