Pasta

Method

Cooking the Pasta

  1. 1

    Boil the Water

In a large pot, bring 4 liters of water to a boil. Add 1 tsp of salt to the boiling water.

  2. 2

    Cook the Pasta

Add 8 cups of pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Drain and Set Aside

Once cooked, drain the pasta in a colander and set aside. Do not rinse.

Preparing the Sauce

  1. 4

    Sauté the Vegetables

In a large saucepan, heat 2 tbs of olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened.

  2. 5

    Add Garlic and Carrot

Stir in the minced garlic and diced carrot. Cook for an additional 2 minutes.

  3. 6

    Add Bell Pepper and Zucchini

Add the diced bell pepper and zucchini to the saucepan. Continue to sauté for 3-4 minutes until the vegetables are tender.

  4. 7

    Add Tomatoes and Spices

Pour in the canned diced tomatoes along with the dried oregano, dried basil, 1 tsp of salt, and 1 tsp of black pepper. Stir well and let the sauce simmer for 10-15 minutes, allowing the flavors to meld.

  5. 8

    Finish with Fresh Basil

Just before serving, stir in the chopped fresh basil leaves for added flavor.

Combining the Pasta and Sauce

  1. 9

    Combine

Add the drained pasta to the saucepan with the sauce. Toss gently to ensure the pasta is well coated with the sauce.

  2. 10

    Serve

Serve hot, garnished with additional fresh basil if desired.
