    Prepare the Steak

    Season the rib eye steak with salt and black pepper on both sides. Heat 1 tablespoon of olive oil in a grill pan over medium-high heat. Once hot, add the steak and grill for about 5-7 minutes on each side for medium-rare, or until desired doneness is reached. Remove from heat and let it rest for 5 minutes before slicing.

    Caramelize the Onions and Peppers

    In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the sliced Spanish onion and green bell pepper. Cook, stirring frequently, until the onions are caramelized and the peppers are tender, about 10-12 minutes. Remove from heat.

    Make the Spicy Mayo

    In a small bowl, combine mayonnaise and sriracha sauce. Mix well until fully combined. Adjust the amount of sriracha to taste, if you prefer it spicier.

    Assemble the Melt

    On a slice of Italian bread, layer the sliced rib eye steak, followed by the caramelized onions and peppers. Place American cheese and cheddar cheese on top. Add pickled jalapeños for an extra kick.

    Grill the Sandwich

    Top with the second slice of Italian bread. Heat the grill pan over medium heat. Add a little olive oil to the pan, then place the sandwich in the pan. Grill for about 3-4 minutes on each side or until the bread is golden brown and the cheese is melted.

    Remove from the grill, slice in half, and serve with extra spicy mayo on the side for dipping.
