Preparing the Fish

    Prepare the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and well combined. Let it rest for 15 minutes.

    Heat the Oil

    In a large, deep pan or fryer, heat the vegetable oil to 350°F (175°C). Ensure there is enough oil to cover the fish completely.

    Coat the Fish

    Pat the fish fillets dry with paper towels. Dip each fillet into the batter, ensuring it is fully coated. Shake off any excess batter.

    Fry the Fish

    Carefully place the battered fish fillets into the hot oil. Fry for about 5-7 minutes, or until golden brown and crispy. Use a slotted spoon to remove the fish and drain it on paper towels.

    Peel the potatoes and cut them into thick chips, about 1/2 inch wide.
