Calamari

Method

Preparing the Calamari

  1. 1

    Soak the Calamari

In a bowl, soak the calamari rings in buttermilk for at least 30 minutes. This will help to tenderize the meat.

  2. 2

    Mix the Dry Ingredients

In a separate bowl, whisk together the flour, cornstarch, salt, black pepper, and paprika until well combined.

  3. 3

    Coat the Calamari

Remove the calamari from the buttermilk and let the excess liquid drip off. Dredge each ring in the flour mixture, making sure to coat evenly. Shake off any excess flour.

Frying the Calamari

  1. 4

    Heat the Oil

In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

  2. 5

    Fry the Calamari

Fry the calamari rings in batches, ensuring not to overcrowd the pan. Cook for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and transfer to a paper towel-lined plate.

Making the Dipping Sauce

  1. 6

    Combine Ingredients

In a small bowl, mix together the mayonnaise, lemon juice, hot sauce, garlic powder, and chopped parsley until smooth and well combined.

Serving

  1. 7

    Serve

Serve the crispy calamari hot with the zesty dipping sauce on the side.
