Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C).
- 2
Prepare Ramekins
Grease four 6-ounce ramekins with butter and dust with cocoa powder to prevent sticking. Place them on a baking tray.
- 3
Melt Chocolate and Butter
In a microwave-safe bowl, combine the unsweetened chocolate and unsalted butter. Microwave on high in 30-second intervals, stirring in between, until melted and smooth.
- 4
Mix Sugar and Eggs
In a separate bowl, whisk together the granulated sugar, large eggs, egg yolks, and vanilla extract until well combined and slightly frothy.
- 5
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture while whisking continuously until fully combined.
- 6
Add Dry Ingredients
Sift the all-purpose flour and salt into the chocolate mixture. Gently fold with a spatula until just combined; do not overmix.
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.
- 8
Bake
Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft and slightly jiggly.
- 9
Cool and Serve
Let the cakes cool for 1 minute. Carefully run a knife around the edges, then invert each ramekin onto a plate. Serve warm, optionally with ice cream or whipped cream.
