Preparing the Potatoes

    Wash and Slice

    Thoroughly wash the Russet potatoes under cold water. Peel the potatoes if desired, then slice them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the sliced potatoes into a bowl of cold water and let them soak for at least 30 minutes. This step helps to remove excess starch and achieve crispiness.

Frying the Chips

    Heat the Oil

    In a large, deep pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Fry the Chips

    Carefully add a handful of potato slices into the hot oil, being careful not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy.

    Remove and Season

    Using a slotted spoon, remove the fried chips from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt and black pepper to taste.
