Prepare the Chicken

    Marinate the Chicken

    In a bowl, combine olive oil, salt, black pepper, and garlic powder. Add the chicken breasts and coat well. Marinate for at least 30 minutes.

    Grill the Chicken

    Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from grill and let rest before slicing.

Prepare the Vegetables

    Caramelize the Onions and Peppers

    Heat 1 tbs of olive oil in a skillet over medium heat. Add the sliced Spanish onions and green bell pepper. Sprinkle with salt and pepper. Cook, stirring occasionally, for about 10-15 minutes until the onions are soft and caramelized.

Assemble the Sandwich

    Prepare the Bread

    Spread butter on one side of each slice of Italian bread.

    Build the Sandwich

    On the unbuttered side of two slices, spread a layer of pesto sauce, followed by sliced grilled chicken, caramelized onions and peppers, sliced tomato, and a generous amount of shredded mozzarella cheese. Top with the remaining slices of bread, buttered side up.

Grill the Sandwich

    Grill the Sandwiches

    Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and grill until golden brown, about 3-4 minutes per side, or until the cheese is melted.
