Chicken Preparation

Marinate the Chicken
In a large bowl, combine buttermilk, eggs, salt, black pepper, paprika, garlic powder, and cayenne pepper. Whisk until well combined. Add the chicken pieces to the mixture, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Coating
In another bowl, combine all-purpose flour, salt, black pepper, paprika, garlic powder, and cayenne pepper. Mix well.

Fry the Chicken
Heat the vegetable oil in a large, deep skillet or fryer over medium-high heat. Remove chicken from the marinade, allowing excess buttermilk to drip off, then dredge each piece in the flour mixture, coating thoroughly. Carefully place chicken in the hot oil and fry in batches until golden brown and cooked through, about 12-15 minutes per batch. Drain on paper towels.

Make the Waffle Batter
In a large bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.

Cook the Waffles
Preheat the waffle iron according to the manufacturer's instructions. Pour the batter onto the preheated waffle iron and cook until golden brown and crisp, about 5 minutes. Repeat with the remaining batter.
Serving

Plate the Dish
On each plate, stack 2 waffles and top with 4 pieces of fried chicken. Drizzle with maple syrup or honey, and add fresh fruit and whipped cream as desired. Serve immediately.
