    Prepare the Chicken

    In a medium bowl, toss the chicken tenders with buffalo sauce until well coated. Set aside.

    Caramelize the Onions and Peppers

    Slice the Spanish onion and green bell pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onion and bell pepper, season with salt and pepper, and cook until softened and caramelized, about 10 minutes. Remove from skillet and set aside.

    Cook the Chicken

    In the same skillet, add the remaining tablespoon of olive oil and heat over medium-high heat. Add the buffalo chicken tenders and cook for about 5-7 minutes, turning occasionally, until cooked through and crispy. Remove from heat.

    Assemble the Melt

    Preheat a grill pan or sandwich press. Take two slices of Italian bread and layer with buffalo chicken tenders, caramelized onions and peppers, and mozzarella cheese. Top with another slice of Italian bread.

    Grill the Sandwich

    Place the assembled sandwich on the grill pan or sandwich press. Grill for about 3-4 minutes on each side or until the bread is golden brown and the cheese is melted.

Serving

    Slice and Serve

    Remove the buffalo chicken melt from the heat, slice in half, and serve hot with extra buffalo sauce on the side if desired.
