Method

Preparation

  1. 1

    Prepare the Bread

Preheat your oven to 400°F (200°C). Slice the baguette or Italian bread into 1/2 inch thick slices. Arrange the slices on a baking sheet.

  2. 2

    Toast the Bread

Drizzle the bread slices with 2 tablespoons of extra virgin olive oil. Toast them in the oven for about 5-7 minutes or until they are golden brown and crispy.

Prepare the Topping

  1. 3

    Chop the Tomatoes

While the bread is toasting, wash and dice the tomatoes into small cubes. Place them in a mixing bowl.

  2. 4

    Add Basil and Seasoning

Chop the fresh basil leaves and add them to the bowl with the tomatoes. Drizzle the mixture with 1 tablespoon of extra virgin olive oil and the balsamic vinegar. Season with salt and black pepper to taste. Mix everything gently.

  3. 5

    Slice the Mozzarella

Slice the fresh mozzarella cheese into thin rounds and set aside.

Assemble the Bruschetta

  1. 6

    Top the Toasts

Once the bread is toasted, remove it from the oven. Spoon the tomato and basil mixture generously onto each slice.

  2. 7

    Add Mozzarella

Place a slice of mozzarella cheese on top of each bruschetta.

Final Touches

  1. 8

    Serve

Drizzle a little more extra virgin olive oil over the assembled bruschetta if desired. Serve immediately while the bread is still warm.
