Line a large baking sheet with aluminum foil or parchment paper for easy cleanup. Place a wire rack on top of the baking sheet.

In a small bowl, combine the brown sugar, black pepper, and ground cinnamon. Mix well to ensure even distribution of spices.

Lay the applewood smoked bacon strips in a single layer on the wire rack. Make sure the strips do not overlap to ensure even cooking.

Sprinkle the sugar and spice mixture evenly over the bacon strips. Use your hands to gently press the mixture down onto the bacon for better adherence.
