    Prepare the Pork

    Rub the pork shoulder generously with the pork rub, ensuring it's coated evenly. Let it marinate for at least 1 hour, or overnight in the refrigerator for best results.

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C). Soak the wood chips in water for about 30 minutes before adding them to the smoker.

    Smoke the Pork

    Place the pork shoulder in the smoker and add the soaked wood chips. Smoke the pork for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C). During cooking, spritz the pork with a mixture of apple cider vinegar and water every hour.

    Rest the Pork

    Once done, remove the pork from the smoker and wrap it in aluminum foil. Let it rest for at least 30 minutes to allow the juices to redistribute.

    Shred the Pork

    After resting, shred the pork using two forks or meat claws. Mix in some of the BBQ sauce if desired.

    Serve

    Serve the pulled pork in half or full pans with additional BBQ sauce on the side.
