1. Prepare the Brisket
In a large pot or Dutch oven, heat olive oil over medium heat. Season the brisket with salt and black pepper and sear it on all sides until browned, about 4-5 minutes per side.
2. Add Aromatics
Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.
3. Season and Simmer
Stir in chili powder, cumin, and smoked paprika. Pour in the beef broth, bring to a simmer, and cover. Cook on low heat for about 3-4 hours, or until the brisket is fork-tender.
4. Shred the Brisket
Once the brisket is cooked, remove it from the pot and let it rest for 10 minutes. Shred the brisket using two forks.
5. Assemble the Tacos
Warm the corn tortillas in a skillet. Fill each tortilla with shredded brisket, and top with chopped cilantro, avocado slices, and a dollop of sour cream. Serve with lime wedges on the side.
