Marinate the Chicken
In a large bowl, combine buttermilk, cayenne pepper, paprika, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and marinate in the refrigerator for at least 2 hours or overnight for best flavor.

Prepare the Chicken Coating
In another bowl, mix together flour and cornstarch. In a separate bowl, beat the eggs. Remove chicken from marinade, allowing excess to drip off, then dredge in the flour mixture, followed by the beaten eggs, and back into the flour mixture for a double coating.

Fry the Chicken
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the chicken pieces in batches for about 6-8 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Make the Waffles
In a large bowl, whisk together flour, baking powder, salt, and sugar. In another bowl, mix milk, eggs, and vanilla extract. Combine wet and dry ingredients, mixing until just combined. Preheat your waffle iron and cook according to the manufacturer's instructions until golden brown.

Place a waffle on a plate, top with a piece of fried chicken, drizzle with hot honey, and garnish with candied jalapenos. Serve immediately.
