Make the Crab Cakes
In a large mixing bowl, combine crab meat, breadcrumbs, mayonnaise, Dijon mustard, Worcestershire sauce, egg, green onion, Old Bay seasoning, salt, and black pepper. Mix gently until just combined.

Form the Cakes
Divide the mixture into 4 equal portions and shape them into patties. Refrigerate for at least 30 minutes to firm up.

Prepare the Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler). Gradually whisk in melted butter, and continue whisking until the sauce thickens. Season with salt and cayenne pepper.

Assemble the Dish
On a plate, place two crab cakes, top each with an over-easy egg, and drizzle with hollandaise sauce before serving.
