Directions
- 1
Prepare the French Toast
In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined. Dip each slice of brioche bread into the egg mixture, ensuring both sides are coated.
- 2
Cook the French Toast
In a large skillet, melt 1 tablespoon of butter over medium heat. Add the dipped brioche slices to the skillet, cooking until golden brown on each side, about 3-4 minutes per side. Repeat with remaining butter and bread.
- 3
Make the Whipped Cream
In a mixing bowl, beat the heavy whipping cream with an electric mixer until soft peaks form. Gradually add in the powdered sugar and continue to beat until stiff peaks form.
- 4
Prepare the Fruit Compote
In a small saucepan over medium heat, combine the seasonal fruit and a splash of water. Cook until the fruit breaks down slightly and becomes syrupy, about 5-7 minutes. Stir in the lemon zest.
- 5
Serve
Plate the golden brioche French toast, top with the sweetened whipped cream and drizzle with the seasonal fruit compote. Garnish with additional lemon zest if desired.
