Preparation of Herb Compound Butter

    Make the Compound Butter

    In a bowl, mix the softened butter, parsley, chives, minced garlic, and lemon zest until well combined. Transfer to plastic wrap, shape into a log, and refrigerate until firm.

Preparation of Gremolata

    Prepare Gremolata

    In a small bowl, mix together chopped parsley, minced garlic, and lemon zest. Set aside.

Cooking the Salmon

    Grill the Salmon

    Preheat the grill to medium-high heat. Brush salmon fillets with olive oil, then season with salt and black pepper. Grill for about 4-5 minutes on each side, or until cooked through. Remove from grill.

Making Lemon Risotto

    Cook the Risotto

    In a saucepan, heat chicken broth and keep it warm. In another pot, melt butter over medium heat, sauté onion until translucent. Add arborio rice and stir for 1-2 minutes. Pour in white wine and let it absorb. Gradually add warm chicken broth, one ladle at a time, stirring frequently until the rice is al dente. Stir in lemon juice and parmesan cheese. Season with salt and pepper.
