Prepare the Tomatoes
Slice the green tomatoes into 1/2 inch thick slices. Sprinkle with salt and let them sit for about 10 minutes to draw out moisture.

Set Up Breading Station
In one bowl, place the all-purpose flour mixed with black pepper, paprika, and salt. In a second bowl, pour the buttermilk. In a third bowl, add the cornmeal.

Bread the Tomatoes
Dip each slice of tomato first into the flour mixture, then into the buttermilk, and finally into the cornmeal, ensuring each slice is well-coated.

Fry the Tomatoes
In a large skillet, heat the oil over medium heat. Once hot, carefully add the breaded tomato slices. Fry for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.

Cook the Smoked Pork Belly
In a separate pan, cook the smoked pork belly until crispy. Cut into small pieces.

Assemble the Dish
On a serving plate, stack the fried green tomatoes, top with pieces of crispy smoked pork belly, drizzle with sugar cane creole mustard, and garnish with microgreens.
