Prepare the Chicken
Season the chicken breasts with olive oil, Creole seasoning, garlic powder, onion powder, salt, and black pepper. Let it marinate for at least 30 minutes.

Cook the Chicken
Grill or fry the marinated chicken breasts over medium heat until fully cooked, about 6-7 minutes per side. Remove from heat and let rest.

Make the Creole Sauce
In a saucepan, sauté chopped onion and bell pepper until softened. Add diced tomatoes and chicken broth, and let simmer for 10 minutes. Stir in heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes.

Prepare housemade mashed potatoes according to your preferred recipe or package instructions.
