Prepare the Fries
Wash and cut the Russet potatoes into fry shapes. Soak them in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes
Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C). Drain the potatoes and pat them dry. Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, then season with Cajun seasoning.

Make the Crawfish Queso
In a saucepan, combine cream cheese, shredded cheddar cheese, milk, diced tomatoes with green chilies, garlic powder, onion powder, and salt. Cook over medium heat, stirring until melted and smooth. Stir in the crawfish tails.

Assemble the Dish
Place the crispy fries on a serving platter. Pour the crawfish queso over the fries. Top with fried crawfish tails and chopped green onions. If desired, add brisket pieces on top.
