    Prepare the Walleye

    Start by seasoning the walleye fillet with salt and black pepper. Set aside.

    Breading the Fillet

    Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge the walleye fillet in flour, dip it in the eggs, and then coat it with breadcrumbs.

    Fry the Fillet

    Heat oil in a frying pan over medium heat. Once hot, carefully add the breaded walleye fillet. Fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

    Assemble the Sandwich

    Slice the ciabatta hoagie rolls in half. Spread a generous layer of pimiento cheese on the bottom half. Place fried walleye on top, then add lettuce and sliced tomatoes. Close the sandwich with the top half of the roll.

    Cut the sandwich in half if desired, and serve immediately with extra tartar sauce on the side.
