    Cook the Bacon

    In a large pot, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.

    Sauté Vegetables

    In the same pot, add butter, diced onion, and diced celery. Sauté until the onion is translucent, about 5 minutes.

    Add Potatoes and Clam Juice

    Add the diced potatoes, clam juice, dried thyme, salt, and black pepper to the pot. Bring to a boil.

    Simmer

    Reduce heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.

    Add Clams and Cream

    Stir in the clams and heavy cream. Continue to cook on low heat for an additional 5 minutes.

    Serve

    Ladle the chowder into bowls, top with the cooked bacon, and serve with toasted crostini.
