    Prepare the Beef Patty

    Divide the ground beef into 2 equal portions (about 1/3 lb each) and shape them into patties. Season both sides with salt and black pepper.

    Caramelize the Onions

    Slice the onion thinly. Heat olive oil in a skillet over medium heat, add the onion, and cook until soft and caramelized, about 15-20 minutes, stirring occasionally. Remove from heat.

    Cook the Bacon

    In the same skillet, cook the bacon strips until crispy. Remove from skillet and place on paper towels to drain excess grease.

    Cook the Burger Patties

    In the skillet with the bacon fat, cook the beef patties for about 3-4 minutes on each side for medium doneness, adding the pimiento cheese on top during the last minute to melt.

    Assemble the Burger

    Toast the burger buns lightly. On the bottom bun, layer the lettuce, the cooked patty with melted pimiento cheese, caramelized onions, and crispy bacon. Top with the other half of the bun.
