Brine the Chicken
In a large bowl, mix buttermilk and hot sauce. Submerge the chicken thighs in the mixture, cover, and refrigerate for at least 2 hours or overnight for maximum flavor.

Prepare the Breading
In another bowl, combine flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well.

Heat the Oil
In a large heavy-bottomed pot or fryer, heat vegetable oil to 350°F (175°C).

Coat the Chicken
Remove chicken thighs from the brine and let excess liquid drip off. Dredge each thigh in the flour mixture, shaking off the excess.

Fry the Chicken
Carefully place the coated chicken thighs in the hot oil, working in batches if necessary. Fry for 8-10 minutes or until golden brown and cooked through. Remove and place on a paper towel-lined plate.

Assemble the Sandwich
Spread a generous amount of pimiento cheese on the bottom half of each potato roll. Add a fried chicken thigh, top with a lettuce leaf, and drizzle with hot honey. Cover with the top half of the roll.
