1. Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.

2. Add Remaining Vegetables

Stir in the carrots, celery, and potatoes. Cook for an additional 5 minutes, stirring occasionally.

3. Add Broth and Simmer

Pour in the vegetable broth and diced tomatoes. Add thyme, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the vegetables are tender.

4. Finish and Serve

Stir in the fresh parsley just before serving. Adjust seasoning with additional salt and pepper if needed. Serve hot.
