Prepare the Chicken
Trim excess fat from the chicken thighs and cut them into bite-sized pieces.

Season the Chicken
In a large bowl, combine the chicken pieces with salt, black pepper, garlic powder, and paprika. Mix well to ensure all pieces are coated. Let it marinate for at least 30 minutes.

Heat the Oil
In a large pot or deep-fryer, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Chicken
Carefully add the chicken pieces to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 6-8 minutes or until they are golden brown and crispy.

Drain and Serve
Remove the chicharrones with a slotted spoon and drain them on paper towels. Serve hot with your choice of dipping sauce.
