Prepare the Beef Patty
Divide the ground beef into two equal portions (1/3 lb each) and shape them into patties. Season both sides with salt and black pepper.

Cook the Patties
In the same skillet with the bacon drippings, cook the beef patties for about 4-5 minutes on each side for medium rare, or until desired doneness.

Add Blue Cheese
In the last minute of cooking, add crumbled blue cheese on top of the patties and cover the skillet to melt the cheese.

Assemble the Burgers
Toast the burger buns lightly. On the bottom half of each bun, place a lettuce leaf, followed by the cooked patty with melted blue cheese, and top with crispy bacon. Finish with the top half of the bun.

Serve
Serve the burgers immediately, optionally with additional lettuce or condiments.
