Prepare the Chips

Peel and Cut the Potatoes
Peel the large potatoes and cut them into thick strips (about 1/2 inch thick) to form chips.

Soak the Chips
Place the cut chips in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

Fry the Chips
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the chips in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels, then season with salt to taste.
Prepare the Tartar Sauce

Mix the Ingredients
In a bowl, combine mayonnaise, finely chopped pickles, lemon juice, finely chopped capers, and fresh dill. Mix well until all ingredients are well incorporated. Add salt to taste.
Prepare the Fish

Make the Batter
In a mixing bowl, whisk together all-purpose flour, baking powder, and salt. Gradually add cold sparkling water, whisking until the batter is smooth and has no lumps.

Heat the Oil
In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

Batter and Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off, then carefully place into the hot oil. Fry until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.
