    Cut the white fish fillets into bite-sized pieces, approximately 1 to 2 inches in size. Season lightly with salt and pepper.

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Fry the Fish Bites

    Dip each piece of fish into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil, cooking in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to remove the fish bites and drain on paper towels.

Tartar Sauce Preparation

    In a small bowl, combine mayonnaise, finely chopped dill pickles, lemon juice, capers, dried dill, and salt. Mix well until all ingredients are thoroughly combined.
