Mousse Preparation

Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

Separate the Eggs
While the chocolate cools, separate the egg yolks from the egg whites. Place the yolks in a large mixing bowl and the whites in a separate bowl.

Whisk Egg Yolks and Sugar
Add granulated sugar to the egg yolks and whisk until the mixture is pale and slightly thickened. Stir in the melted chocolate and vanilla extract until well combined.

Whip Egg Whites
Using a hand mixer or a stand mixer, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until no white streaks remain.

Chill the Mousse
Spoon the mousse into serving dishes or ramekins and refrigerate for at least 4 hours, or until set.

In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Using a hand mixer or stand mixer, whip until soft peaks form.

Once the mousse is set, top each serving with a dollop of whipped cream before serving.
