Preheat the Oven
Preheat your oven to 425°F (220°C). This ensures the cake bakes evenly and achieves a molten center.

Melt Chocolate and Butter
In a double boiler or microwave, melt the bittersweet chocolate and unsalted butter together. If using a microwave, heat in 20-second intervals, stirring in between until melted and smooth.

Mix Eggs and Sugar
In a separate large bowl, whisk together the large eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened.

Add Dry Ingredients
Sift in the all-purpose flour, add the vanilla extract, and a pinch of salt. Gently fold the ingredients together until just combined. Be careful not to overmix.

Fill Ramekins
Divide the cake batter evenly among the prepared ramekins, filling each about 3/4 full.

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes. The edges should be firm while the center remains soft.

Let the cakes cool for 1 minute. Carefully invert each ramekin onto a plate, tapping gently to release. Serve immediately with a scoop of vanilla ice cream on the side.
