Cake Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C). This ensures the cake bakes evenly and achieves a molten center.

    Melt Chocolate and Butter

    In a double boiler or microwave, melt the bittersweet chocolate and unsalted butter together. If using a microwave, heat in 20-second intervals, stirring in between until melted and smooth.

    Mix Eggs and Sugar

    In a separate large bowl, whisk together the large eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened.

    Combine Mixtures

    Slowly pour the melted chocolate and butter mixture into the egg mixture while continuously whisking until fully combined.

    Add Dry Ingredients

    Sift in the all-purpose flour, add the vanilla extract, and a pinch of salt. Gently fold the ingredients together until just combined. Be careful not to overmix.

    Grease four 6-ounce ramekins with butter and dust with flour, tapping out any excess. This will help the cakes to release easily after baking.
