Prepare the Filling
Boil the potatoes until soft, then peel and mash them. In a pan, heat oil and add cumin seeds. Once they splutter, add chopped onions and sauté until translucent. Add grated ginger, peas, mashed potatoes, coriander powder, garam masala, and salt. Mix well and cook for a few minutes. Stir in chopped cilantro and set aside to cool.

Make the Dough
In a mixing bowl, combine flour and salt. Gradually add water to form a soft dough. Knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Assemble the Samosas
Divide the dough into small balls and roll each ball into a thin oval. Cut the oval in half to form two semi-circles. Take one semi-circle, form a cone by folding it and sealing the edge with water. Fill the cone with potato filling and seal the open edge by pressing it together.

Deep Fry the Samosas
In a deep pan, heat oil for frying. Once hot, carefully add the samosas in batches and fry until they are golden brown and crispy. Remove and drain on paper towels.

Serve hot with mint chutney or tamarind sauce.
