    Prepare the Filling

    In a pan, heat a little oil and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown. Stir in ginger, garlic, and spices (coriander, turmeric, garam masala, and salt). Add mashed potatoes and peas. Cook for a few minutes and mix well. Finally, add chopped cilantro and let the mixture cool.

    Make the Dough

    In a mixing bowl, combine all-purpose flour, salt, and a little oil. Gradually add water and knead into a smooth dough. Cover it and let it rest for 30 minutes.

    Shape the Samosas

    Divide the dough into small balls. Roll each ball into a thin oval shape. Cut it in half to form two semi-circles. Take one semi-circle, form a cone shape by sealing the straight edge, and fill it with the potato mixture. Seal the open edge by pressing it together.

    Fry the Samosas

    In a deep frying pan, heat oil over medium heat. Carefully drop the samosas in batches and fry until they are golden brown and crispy. Remove and drain on paper towels.

    Serve hot with mint chutney or tamarind sauce.
