Prepare the Lentil Batter
Rinse the red lentils under cold water and soak them in water for about 2 hours. After soaking, drain the lentils and blend them with 1.5 cups of water until smooth. Transfer to a mixing bowl.

Season the Batter
Add cumin seeds, coriander powder, turmeric powder, chili powder, garam masala, and salt to the lentil batter. Mix well until all ingredients are combined.

Prepare the Shrimp
Peel and devein the jumbo shrimp, leaving the tails on for presentation. Pat them dry with paper towels.

Heat the Oil
In a deep frying pan, heat enough oil over medium heat for deep frying (about 2 inches deep).

Coat and Fry
Dip each shrimp into the lentil batter, ensuring they are well coated. Once the oil is hot, carefully add the coated shrimp to the oil in batches. Fry until they are golden brown and crispy, about 3-4 minutes per side.

Drain and Serve
Once cooked, remove the shrimp from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.
