    Prepare the Lentil Batter

    Rinse the red lentils under cold water and soak them in water for about 1 hour. After soaking, drain and blend with fresh water (1.5 cups) until smooth. Add turmeric, cumin, coriander, chili powder, salt, and baking powder. Mix well to form a thick batter.

    Prepare the Shrimp

    Peel and devein the jumbo shrimp, leaving the tails intact. Pat them dry with a paper towel.

    Coat the Shrimp

    Dip each shrimp into the lentil batter, ensuring they are fully coated.

    Heat the Oil

    In a deep frying pan, heat the oil over medium-high heat until hot.

    Fry the Shrimp

    Carefully place the coated shrimp in the hot oil. Fry until they are golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Garnish and Serve

    Garnish the shrimp parkoras with chopped fresh cilantro and serve hot with your favorite dipping sauce.
