Prepare the Greens
Wash the mustard greens and spinach thoroughly. Chop them coarsely.

Cook the Greens
In a large pot, bring water to a boil and add the chopped mustard greens and spinach. Cook for about 10-15 minutes until soft. Drain and let cool.

Blend the Greens
Once cooled, puree the cooked greens in a blender until smooth. Set aside.

Add Tomatoes and Spices
Add the chopped tomato, grated ginger, green chilies, salt, and garam masala to the pan. Cook until the tomatoes are soft and the mixture is well combined.

Combine and Cook
Add the pureed greens to the sautéed mixture. Stir well and cook on low heat for about 10 minutes, allowing the flavors to meld.

Serve
Serve hot with makki di roti (corn flatbread) or rice.
